Easy and Tasty 'Tarte au Citron'



I know this 'Tarte au Citron' recipe is actually not original Charentaise, but I hope I am forgiven to add it to my list of recipes anyway, as I think it is absolutley delicious.

This Tarte au Citron recipe was still given to me by my neighbour and she did make it for me.

It just reminds me of the beautiful Springtime and days getting longer....

Sorry, just dreaming away.

I shall give you the recipe and maybe you will start dreaming of the Spring or Summer as well, or maybe even of going away on a relaxing Holiday here in the South-West-France or any other place where the Sun might shine.

I know I am going on a bit, but carry on reading and you will get to the recipe.


Okay, here is the recipe:

Tarte au Citron

This serves about 6 people and if you don't want to use shop bought pastry you will have to start with preparing the pastry.

Ingredients for the Pastry

200g Plain Flour, plus a little extra for dusting

3 tbsp Ground almonds

100g Butter, plus some extra for greasing

50g Sifted Icing sugar

1 Grated rind of a Lemon

1 Egg yolk beaten

3 tbsp Milk

Preparation

Sift the flour into a bowl and mix in the almonds and the diced butter. Add the icing sugar, lemon rind, egg yolk and milk. Knead it lightly on a floured work surface. After put it aside for about 30 minutes.

Already preheat your oven to 180 celcius. Then grease a medium tarte tin with butter. After the 30 minutes roll out the Pastry until it is about 5mm thick. Place it in your tarte tin, prick it all over with a fork and then bake for 15 minutes. Take it out of the oven and put aside until your are ready with the filling.

Leave the oven on, but reduce the heat to 150 celcius

Ingredients for the Filling

4 Eggs

250g Caster Sugar

2 Lemons, you will need the juice and grated rind

150ml Double cream

Preparation

Crack all the eggs into a bowl and whisk in the sugar, the lemon juice, rind and the cream.

Give it a good whisk and then pour or spoon it in to the tarte tin.

Bake for 45 minutes and after leave to cool.

Voila, here is your Tarte au Citron.

How you serve it depends on what you like.

I had it with some tasty rasberries, but how about some ice cream or any other kind of fruit.

Whatever you like......



That recipe sounded pretty easy I thought.
