When in France, you just need to try some Crepes

I know you can call them Pancakes as well, but the french version just sounds better??!!
It is not just a Charentaise speciality, as it is eaten all over France, but I still thought that it should be included in my few
as it is real french.
As far as I know, at least in my family, both children and adults enjoy Crepes.
I admit we would never have them for dinner as I like to think of it as a dessert, but some people like savoury ones and have them in the evening.
What you will find here is a dessert recipe, but if my Charentaise neighbour knows of a great
I will certainly add it.
The following recipe is with a Lemon filling.
The preperation time is about 20 minutes, standing time 30 minutes and to cook about 8/10 crepes it will take 10 minutes.
This is depending how quick you are, so don't take too much notice of the times.
When I cook I always think it will take as long as it will take!!!!
125 g Flour
30 cl Milk
1/2 Packet of Yeast
50 g Melted Butter
1/2 Packet of Vanilla sugar
1 tbs Sugar
For the Lemon topping you will need:
100 g Sugar
75 g Butter
A little Oil for the pan
Mix the eggs, yeast, sugar and flour together in a bowl
Add the milk and the melted butter and stir vigorously for about 2 minutes.
Let it stand for 30 minutes.
For the Lemon topping mix the 3 eggs, sugar, juice of 3 lemons and the grated zest of 2 lemons in to another bowl.
Let it simmer over a low heat and stir until the mixture thickens and becomes creamy.
Remove from the heat and add the butter, which is already cut in to small pieces, in the still hot mixture.
Leave the mixture to rest, but keep warm and start making your Crepes.
Remember that they are very thin.
Once they are all done, spoon the Lemon mixture in to each Crepe and fold them in to four.
You can decorate them with more lemon if you want it to look pretty.
It can now be served, either just like that or maybe with some ice cream................
